- 6 bone-in, skin-on chicken thighs
- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard (optional)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar or lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or fresh if preferred)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the glaze: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard (if using), apple cider vinegar (or lemon juice), garlic, thyme, salt, and pepper until smooth and well combined.
- Season the chicken: Pat the chicken thighs dry with paper towels. Drizzle olive oil over both sides and season with salt and pepper.
- Coat with glaze: Place the chicken thighs on the prepared baking sheet. Brush both sides generously with the honey mustard glaze, reserving a small amount for basting later.
- Bake the chicken: Transfer the chicken to the oven and bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. Halfway through cooking, baste the chicken with the reserved glaze.
- Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
