Honey Mustard Glazed Chicken Thighs

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or fresh if preferred)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the glaze: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard (if using), apple cider vinegar (or lemon juice), garlic, thyme, salt, and pepper until smooth and well combined.
  3. Season the chicken: Pat the chicken thighs dry with paper towels. Drizzle olive oil over both sides and season with salt and pepper.
  4. Coat with glaze: Place the chicken thighs on the prepared baking sheet. Brush both sides generously with the honey mustard glaze, reserving a small amount for basting later.
  5. Bake the chicken: Transfer the chicken to the oven and bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. Halfway through cooking, baste the chicken with the reserved glaze.
  6. Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
