Honey Mustard Baked Chicken Thighs Recipe

These baked chicken thighs are incredibly flavorful, featuring a tangy and sweet honey mustard glaze. They’re simple to prepare and perfect for a weeknight dinner.

Ingredients:

  • Chicken:
    • 4-6 bone-in, skin-on chicken thighs
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon paprika
  • Honey Mustard Glaze:
    • 1/4 cup Dijon mustard
    • 1/4 cup honey
    • 1 tablespoon yellow mustard
    • 1 tablespoon apple cider vinegar  
    • 1 teaspoon Worcestershire sauce (optional)

Instructions:

  1. Preheat and Prep:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper for easy cleanup.
  2. Season the Chicken:
    • Pat the chicken thighs dry with paper towels.
    • In a small bowl, combine salt, pepper, garlic powder, and paprika.
    • Season the chicken thighs evenly on both sides with the spice mixture.
  3. Prepare the Honey Mustard Glaze:
    • In a separate bowl, whisk together Dijon mustard, honey, yellow mustard, apple cider vinegar, and Worcestershire sauce (if using).
  4. Glaze the Chicken:
    • Place the seasoned chicken thighs on the prepared baking sheet, skin-side up.
    • Brush a generous amount of the honey mustard glaze over the chicken thighs.
  5. Bake:
    • Bake the chicken thighs for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.  
    • About halfway through the cooking process, you may want to brush the chicken thighs with any remaining glaze from the bowl.
  6. Rest and Serve:
    • Remove the chicken thighs from the oven and let them rest for 5 minutes before serving.
    • Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple salad.

Tips and Variations:

  • For extra crispy skin, you can broil the chicken thighs for the last few minutes of cooking. Watch them closely to prevent burning.
  • You can adjust the sweetness and tanginess of the glaze by adding more or less honey or Dijon mustard.
  • Add a pinch of cayenne pepper to the glaze for a little spice.
  • If you do not have bone in skin on chicken thighs, boneless skinless chicken thighs can be used, however the cooking time will be reduced.
  • Garnish with fresh parsley or chives before serving.
