INGREDIENTS:

  • 1 cup granulated sugar (for caramel)
  • 4 large eggs
  • 1 can (400g) sweetened condensed milk
  • 1 can (400ml) evaporated milk
  • 1 tablespoon vanilla extract
  • 1/2 cup whole milk

INSTRUCTIONS:

  1. Preheat oven to 180°C (350°F).
  2. In a saucepan, melt the sugar over medium heat until it turns golden brown. Quickly pour the caramel into a baking dish, coating the bottom evenly.
  3. In a bowl, whisk eggs until smooth.
  4. Add condensed milk, evaporated milk, whole milk, and vanilla extract. Mix well.
  5. Pour the mixture over the hardened caramel in the baking dish.
  6. Place the dish in a larger pan filled with hot water (water bath).
  7. Bake for 50–60 minutes or until the center is set.
  8. Remove from oven, let it cool, then refrigerate for at least 4 hours.
  9. Run a knife around the edges and flip onto a serving plate before serving.

TIPS:

  • Do not overcook; it should jiggle slightly in the center.
  • Use a water bath to prevent cracks and ensure even cooking.
  • Let it chill completely for the best texture.
  • For extra flavor, add a pinch of lemon zest or cinnamon.
