Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 4-5 jalapeños, finely diced (seeds removed for less heat)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 cups seasoned breadcrumbs (panko or regular)
  • Oil for frying

Instructions

  1. Prepare the Filling – In a bowl, mix cream cheese, cheddar cheese, pepper jack cheese, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined.
  2. Form the Bites – Roll the mixture into small bite-sized balls (about 1 inch in diameter) and place them on a baking sheet. Freeze for 20-30 minutes until firm.
  3. Coat the Bites – Set up a breading station:
    • Bowl 1: Flour
    • Bowl 2: Beaten eggs mixed with milk
    • Bowl 3: Seasoned breadcrumbs
      Roll each ball in flour, then dip in the egg mixture, and finally coat with breadcrumbs. Repeat for extra crispiness.
  4. Fry – Heat oil in a deep fryer or heavy-bottomed pan to 350°F (175°C). Fry the bites in batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.
  5. Serve – Enjoy hot with ranch dressing, spicy mayo, or your favorite dipping sauce!
