This recipe provides a simple and cost-effective way to make sweetened condensed milk at home. It’s perfect for baking, desserts, and coffee when you don’t have a can on hand.
Ingredients:
- 1 cup (240ml) Whole Milk (for a richer flavor, you can use slightly less milk and add 2-4 tablespoons of heavy cream)
- 1/2 cup (100g) Granulated Sugar
- 2 tablespoons (30g) Unsalted Butter (optional, adds richness and helps prevent scorching)
- 1/4 teaspoon (optional) Vanilla extract (added after cooking)
- Pinch of Salt (optional, enhances flavor)
Instructions:
- Combine Ingredients: In a medium-sized saucepan, combine the milk, sugar, butter (if using), and salt (if using).
- Heat and Dissolve: Place the saucepan over medium-low heat. Stir constantly until the sugar is completely dissolved. This is important to prevent the sugar from crystallizing later.
- Simmer and Thicken: Once the sugar is dissolved, bring the mixture to a very gentle simmer. Reduce the heat to low to maintain the simmer. Continue to stir frequently, especially as the mixture begins to thicken.
- Cook and Reduce: Simmer the mixture uncovered for approximately 20-30 minutes, or until it has reduced by about half and thickened to the consistency of heavy cream. The time will vary depending on your stovetop and the width of your pan. A wider pan will allow the liquid to evaporate faster. Be careful not to let it boil vigorously, as this can cause it to scorch. The mixture will continue to thicken slightly as it cools.
- Test for Doneness: To test if the sweetened condensed milk is ready, dip a spoon into the mixture and then run your finger across the back of the spoon. If the line holds its shape and doesn’t run, it’s thick enough.
- Cool and Add Vanilla: Remove the saucepan from the heat and let the sweetened condensed milk cool completely to room temperature. As it cools, it will thicken further. Once cooled, stir in the vanilla extract (if using).
- Store: Pour the homemade sweetened condensed milk into a clean, airtight container. Store it in the refrigerator for up to 2 weeks.
Notes:
- Milk Choice: Whole milk is recommended for the best flavor and texture. You can use 2% milk, but the result will be less rich. Avoid using skim milk.
- Sugar: Granulated sugar is typically used.
- Butter: Butter is optional but adds richness and helps prevent scorching.
- Vanilla: Vanilla extract is optional but adds a nice flavor. Add it after cooking, as heat can diminish its flavor.
- Consistency: The final consistency should be similar to store-bought sweetened condensed milk. It will thicken as it cools.
- Color: The color will deepen slightly during cooking, becoming a light golden color.
- Stirring: Frequent stirring is crucial to prevent scorching and ensure even thickening.
- Don’t Overcook: Overcooking can lead to a grainy or crystallized texture.
Enjoy your homemade sweetened condensed milk!
