Ingredients:
For the Sausage Filling:
- 500g (1 lb) pork sausage meat (or your favorite sausage)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh parsley, chopped (optional)
For the Pastry:
- 375g (13 oz) puff pastry (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Flour, for dusting
Instructions:
- Preheat the Oven: Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper to prevent sticking.
- Prepare the Filling: In a mixing bowl, combine the pork sausage meat, chopped onion, minced garlic, thyme, sage, smoked paprika, Worcestershire sauce, and fresh parsley (if using). Season with salt and pepper. Mix well until all ingredients are evenly combined.
- Roll Out the Pastry: Lightly flour your work surface and roll out the puff pastry to about 3mm (1/8 inch) thick. Cut the pastry into rectangles, approximately 10cm x 15cm (4 inches x 6 inches), depending on how large you want your sausage rolls to be.
- Assemble the Sausage Rolls: Place a generous spoonful of the sausage mixture along one edge of each pastry rectangle. Be careful not to overfill. Brush the edges of the pastry with beaten egg to help seal them. Roll the pastry over the filling to form a log, sealing the edges by pressing them together with a fork.
- Prepare for Baking: Place the sausage rolls seam-side down on the prepared baking tray. Brush the tops with the remaining beaten egg to give them a golden finish while baking. You can also sprinkle a little sesame or poppy seeds on top for added texture and flavor.
- Bake: Bake in the preheated oven for 25-30 minutes or until the pastry is puffed and golden brown. The internal temperature of the sausage filling should reach at least 75°C (165°F).
- Cool and Serve: Once baked, remove the sausage rolls from the oven and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauces, such as ketchup, mustard, or a tangy chutney.
