Homemade Pancakes

Ingredients

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. (Do not overmix; lumps are okay!)
  4. Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  6. Flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm with butter, syrup, fresh fruit, or your favorite toppings!
