- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tsp salt
- 1 tbsp sugar
- 1 ¼ cups milk
- 1 egg
- 3 tbsp melted butter
- 1 tsp vanilla extract (optional)
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. (Do not overmix; lumps are okay!)
- Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with butter, syrup, fresh fruit, or your favorite toppings!
