Ingredients

  • 2 flour tortillas (soft taco size)
  • 1 cup ground beef (or chicken)
  • 1/2 packet taco seasoning (or homemade seasoning)
  • 1/2 cup refried beans
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced green onions (optional)
  • 1/4 cup sour cream (for topping)
  • Salsa (for serving)
  • Fresh cilantro (for garnish, optional)
  • Jalapeño slices (optional, for extra heat)

Instructions

  1. Prepare the Beef:
    • In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
    • Stir in the taco seasoning and a splash of water (as directed on the seasoning packet), then simmer for a couple of minutes until the beef is coated and flavorful.
  2. Prepare the Tortillas:
    • Preheat your oven to 400°F (200°C).
    • Lightly brush or spray the tortillas with a bit of oil on both sides. Place them on a baking sheet and bake for about 4-5 minutes until they are slightly crisp.
  3. Assemble the Pizza:
    • Spread a layer of refried beans on one of the tortillas.
    • Add a generous layer of seasoned beef on top of the beans.
    • Sprinkle the shredded cheese over the beef.
    • Place the second tortilla on top of the cheese.
