Homemade Easy Cheesy Pizza Pockets

Ingredients

  • 1 can refrigerated pizza dough (or homemade dough)
  • 1 cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni or chopped cooked sausage (optional)
  • 1 tsp Italian seasoning
  • 1 egg (for egg wash)
  • 1 tbsp olive oil (for brushing)
  • Optional: Parmesan cheese and red pepper flakes for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the pizza dough on a lightly floured surface. Cut into 4-6 rectangles (or circles if using a cutter).
  3. Add filling: On one side of each piece, spread 1-2 tablespoons of pizza sauce, a generous sprinkle of mozzarella, and your favorite toppings like pepperoni or sausage.
  4. Fold and seal: Fold the dough over to cover the filling and press edges with a fork to seal.
  5. Egg wash: Beat the egg and brush it over the top of each pocket for a golden finish.
  6. Season and top: Brush with olive oil and sprinkle Italian seasoning on top. Add grated Parmesan or red pepper flakes if desired.
  7. Bake for 12–15 minutes, or until golden brown and bubbling.
  8. Cool slightly and serve with extra pizza sauce for dipping.
