INGREDIENTS:
- 1 liter whole milk
- 2 tablespoons plain yogurt (with live live cultures)
INSTRUCTIONS:
- Pour the milk into a pot and heat it until it comes to a gentle boil.
- Lower the heat and simmer for 5 minutes, stirring occasionally.
- Turn off the heat and let the milk cool until it is warm (lukewarm, not hot).
- In a small bowl, mix the 2 tablespoons of yogurt with a little warm milk.
- Add this mixture back into the pot and stir gently.
- Cover the pot with a lid and wrap it in a towel.
- Keep it in a warm place for 6–10 hours or overnight to set.
- Once thickened, refrigerate for a few hours before serving.
TIPS:
- Do not add yogurt when milk is too hot, it will kill the culture.
- Keep the container warm for better thick and creamy texture.
- Use full-fat milk for richer yogurt.
- Avoid shaking the yogurt while it is setting.
