Ingredients

For the Ice Cream Base:

Instructions

  1. Prepare the Ice Cream Base:
    In a large bowl, whip the heavy cream until stiff peaks form. In a separate bowl, mix the condensed milk and vanilla extract. Gently fold the whipped cream into the condensed milk mixture until well combined.
  2. Freeze the Bars:
    Pour the ice cream mixture into silicone molds or a parchment-lined baking dish. Insert popsicle sticks if desired. Freeze for at least 6 hours or overnight until completely solid.
  3. Make the Chocolate Coating:
    In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  4. Dip the Ice Cream Bars:
    Remove the frozen ice cream bars from the molds. Quickly dip each bar into the melted chocolate, letting the excess drip off. The chocolate will harden within seconds.
  5. Add Toppings (Optional):
    Before the chocolate sets completely, sprinkle your desired toppings over each bar.
  6. Freeze Again (Optional):
    Place the bars on a parchment-lined tray and freeze for 10–15 more minutes to ensure the coating is fully set.
