Instructions
- Prepare the Ice Cream Base:
In a large bowl, whip the heavy cream until stiff peaks form. In a separate bowl, mix the condensed milk and vanilla extract. Gently fold the whipped cream into the condensed milk mixture until well combined. - Freeze the Bars:
Pour the ice cream mixture into silicone molds or a parchment-lined baking dish. Insert popsicle sticks if desired. Freeze for at least 6 hours or overnight until completely solid. - Make the Chocolate Coating:
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. - Dip the Ice Cream Bars:
Remove the frozen ice cream bars from the molds. Quickly dip each bar into the melted chocolate, letting the excess drip off. The chocolate will harden within seconds. - Add Toppings (Optional):
Before the chocolate sets completely, sprinkle your desired toppings over each bar. - Freeze Again (Optional):
Place the bars on a parchment-lined tray and freeze for 10–15 more minutes to ensure the coating is fully set.
