- Prepare the Ice Cream:
- Scoop softened vanilla ice cream into a mixing bowl.

- Spoon the mixture into popsicle molds or small paper cups.
- Insert popsicle sticks and freeze for at least 4 hours or until solid.
- Make the Chocolate Coating:
- In a microwave-safe bowl, combine chocolate and coconut oil.
- Microwave in 30-second intervals, stirring each time, until smooth and fully melted.
- Let the chocolate cool slightly (but not harden).
- Dip and Decorate:
- Remove the frozen bars from molds (run under warm water briefly if needed).
- Dip each bar into the melted chocolate, allowing excess to drip off.
- Quickly sprinkle with toppings before the chocolate sets.
- Set and Serve:
- Lay bars on a parchment-lined tray and return to the freezer for 10–15 minutes until chocolate is firm.
