Homemade Chocolate-Covered Ice Cream

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips (for the chocolate coating)
  • 2 tbsp coconut oil (for the chocolate coating)
  • Optional toppings: sprinkles, crushed nuts, or mini chocolate chips

Instructions

  1. Prepare the Ice Cream Base:
    • In a medium mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar is completely dissolved.
  2. Chill the Mixture:
    • Pour the mixture into an ice cream maker and follow the manufacturer’s instructions to churn the ice cream. Typically, it will take about 20-25 minutes to thicken.
  3. Freeze the Ice Cream:
    • Once churned, transfer the soft ice cream to a container and freeze for at least 4 hours or until firm.
  4. Prepare the Chocolate Coating:
    • In a small microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  5. Coat the Ice Cream:
    • Once the ice cream is firm, use an ice cream scoop to form balls or serve individual scoops. Quickly dip each scoop into the melted chocolate coating, making sure it’s evenly covered.
  6. Add Toppings (Optional):
    • Before the chocolate hardens, sprinkle any desired toppings like crushed nuts, mini chocolate chips, or sprinkles.
  7. Freeze Again:
    • Place the coated ice cream back on a parchment-lined tray and return to the freezer for about 30 minutes to let the chocolate coating set.
  8. Serve:
    • Once the chocolate is firm and the ice cream is fully frozen, serve immediately and enjoy your homemade chocolate-covered ice cream!

Enjoy your delicious, homemade chocolate-covered ice cream! 🍦🍫
