A hearty and comforting stew, perfect for a cold day. This recipe uses simple ingredients and is easy to prepare.

Ingredients:

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups beef broth
  • 1 cup red wine
  • 1 tablespoon flour
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef from the pot and set aside.
  2. Sauté vegetables: In the same pot, add onions, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
  3. Add seasonings: Stir in Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 1 minute more.
  4. Combine ingredients: Return the beef to the pot. Pour in beef broth and red wine. Bring to a boil, then reduce heat to low and simmer for 1-2 hours, or until beef is tender.
  5. Thicken the stew: In a small bowl, whisk together flour and butter until smooth. Add the mixture to the stew and simmer for 5 minutes, or until the stew has thickened.
  6. Serve: Garnish with chopped parsley and serve hot.
