Ingredients:
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups beef broth
- 1 cup red wine
- 1 tablespoon flour
- 2 tablespoons butter
- 1 tablespoon chopped fresh parsley
Instructions:
- Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef from the pot and set aside.
