Ingredients:

For the Fritters:

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups diced apples (about 2 medium apples)

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Apples: Peel, core, and dice the apples into small pieces.
  2. Make the Batter: In a large bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the diced apples.

  7. Fry the Fritters: Using a spoon or a small ice cream scoop, drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes per side, or until golden brown.
  8. Drain and Cool: Remove the fried fritters from the oil and drain on paper towels.
  9. Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  10. Glaze the Fritters: Dip the warm fritters into the glaze, allowing the excess to drip off.
