Instructions:
- Prepare the Apples:
- Peel, core, and dice the apples into small pieces. Set aside.
- Mix Dry Ingredients:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients:
- In another bowl, beat the eggs, then add milk and vanilla extract. Mix well.
- Combine Mixtures:
- Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix. Fold in the diced apples until evenly distributed.

- In a deep skillet or pot, heat about 2 inches of oil to 350°F (175°C). You can test the oil by dropping in a small amount of batter; it should sizzle and rise to the surface.
- Fry the Fritters:
- Using a spoon or cookie scoop, carefully drop batter into the hot oil (do not overcrowd). Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
- Make the Glaze:
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or sugar as needed.
