Ingredients

  • 2 cups fresh mixed greens (lettuce, spinach, or arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/2 cup feta cheese or your favorite cheese, crumbled
  • 1/4 cup toasted nuts or seeds (like sunflower seeds, almonds, or walnuts)
  • 1/4 cup dried cranberries or raisins (optional)
  • Salt and black pepper to taste

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice or balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste

Instructions
