Ingredients

  • 2 medium zucchinis, grated

  • 1 large egg, beaten
  • 2 tablespoons all-purpose flour

Instructions

  1. Prepare the zucchini: Place the grated zucchini in a colander, sprinkle with salt, and let it sit for 10 minutes. Then, squeeze out excess moisture using a clean towel.
  2. Mix the ingredients: In a large bowl, combine the zucchini, breadcrumbs, Parmesan cheese, parsley, garlic powder, black pepper, onion powder, paprika, beaten egg, and flour. Stir until well combined.
  3. Form the patties: Scoop about 2 tablespoons of the mixture and shape it into small patties.
  4. Cook the patties: Heat olive oil in a pan over medium heat. Cook the patties for about 3-4 minutes per side until golden brown and crispy.
  5. Serve: Drain on paper towels and serve warm with sour cream, yogurt dip, or a side of salad.
