Herb Salad with Lemon Dressing

Ingredients

  • 2 cups mixed fresh herbs (parsley, cilantro, dill, mint, basil)
  • 1 cup arugula or baby spinach
  • ½ small red onion, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup toasted nuts (almonds, pine nuts, or walnuts)
  • ¼ cup crumbled feta or goat cheese (optional)

Lemon Dressing:

  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • ½ tsp Dijon mustard
  • 1 small garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the fresh herbs, arugula (or baby spinach), red onion, cherry tomatoes, and toasted nuts.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, garlic, salt, and black pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat.
