- 1 cup arugula or baby spinach
- ½ small red onion, thinly sliced
- ½ cup cherry tomatoes, halved

- ¼ cup crumbled feta or goat cheese (optional)
Lemon Dressing:
- 3 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp honey or maple syrup
- ½ tsp Dijon mustard
- 1 small garlic clove, minced
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the fresh herbs, arugula (or baby spinach), red onion, cherry tomatoes, and toasted nuts.
- In a small bowl or jar, whisk together the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, garlic, salt, and black pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat.
