Instructions:
1. Prepare the Pastry:
- In a large mixing bowl, combine flour, salt, and sugar.
- Add the cold, cubed butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together. Do not overmix.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Make the Custard Filling:
- In a saucepan, heat the milk over medium heat until it begins to steam, but do not let it boil.
- In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until smooth.
