- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 2 cups diced tomatoes (canned or fresh)
- 3 large carrots, sliced
- 2 celery stalks, chopped
- 2 large potatoes, diced
- 1 cup green beans, cut into bite-sized pieces
- 1 cup corn kernels
- 1 cup peas
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides. Remove the beef and set aside.
- Sauté the Aromatics: In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent and fragrant.
- Combine Ingredients: Return the browned beef to the pot. Add the beef broth, water, and diced tomatoes. Stir in the carrots, celery, potatoes, green beans, corn, and peas.
- Season the Soup: Add the Worcestershire sauce, dried thyme, dried basil, salt, and pepper. Stir well to combine.
- Simmer to Perfection: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
- Serve and Enjoy
