- 1 can (15 oz) chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro or parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice (or lime juice)
- ½ teaspoon ground cumin (optional)
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine the chickpeas, diced avocado, cherry tomatoes, cucumber, red onion, and fresh herbs.
- In a small bowl, whisk together the olive oil, lemon juice, cumin (if using), salt, and pepper.
- Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
- Taste and adjust seasoning if needed.
- Serve immediately or chill for 20–30 minutes for the flavors to meld.
