Healthy Oatmeal Fruit Cookies Recipe

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mixed dried fruit (cranberries, raisins, apricots, etc.)
  • 1/2 cup chopped nuts (almonds, walnuts, pecans, etc.)

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine dry ingredients: In a large bowl, whisk together the rolled oats, whole wheat flour, brown sugar, baking soda, and salt.  
  3. Combine wet ingredients: In a separate bowl, whisk together the maple syrup, vegetable oil, egg, and vanilla extract.
  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add fruit and nuts: Stir in the dried fruit and chopped nuts.
  6. Form cookies: Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake for 10-12 minutes, or until golden brown.
  8. Cool and enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips:  

  • For a nut-free version, omit the nuts.
  • You can use any type of dried fruit you like.
  • For a chewier cookie, chill the dough for 30 minutes before baking.
  • Store the cookies in an airtight container at room temperature for up to 3 days.
