Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour (or all-purpose flour)
  • ½ cup honey or maple syrup
  • ½ cup coconut oil or unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup mixed dried fruit (raisins, cranberries, chopped apricots, etc.)
  • ½ cup chopped nuts (almonds, walnuts, pecans, etc.)

Instructions

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the egg, melted coconut oil (or butter), honey (or maple syrup), and vanilla until well combined.
  4. Add the wet ingredients to the dry mixture and stir until combined.
  5. Fold in the dried fruit and chopped nuts.
  6. Scoop spoonfuls of dough onto the prepared baking sheet and gently flatten with the back of a spoon.
  7. Bake for 10–12 minutes, or until the edges are golden brown.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
