- 2 cups rolled oats
- 1 cup whole wheat flour (or all-purpose flour)
- ½ cup honey or maple syrup
- ½ cup coconut oil or unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup mixed dried fruit (raisins, cranberries, chopped apricots, etc.)
- ½ cup chopped nuts (almonds, walnuts, pecans, etc.)
Instructions
- Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, mix together oats, flour, baking powder, cinnamon, and salt.
- In another bowl, whisk the egg, melted coconut oil (or butter), honey (or maple syrup), and vanilla until well combined.
- Add the wet ingredients to the dry mixture and stir until combined.
- Fold in the dried fruit and chopped nuts.
- Scoop spoonfuls of dough onto the prepared baking sheet and gently flatten with the back of a spoon.
- Bake for 10–12 minutes, or until the edges are golden brown.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
