Healthy Apple and Oatmeal Pancakes

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 medium apple, peeled and grated
  • 1 egg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • Pinch of salt
  • Coconut oil or butter (for cooking)

Instructions

  1. Soak the oats:
    In a bowl, combine the oats and milk. Let it sit for 10–15 minutes so the oats soften.
  2. Prepare the batter:
    Add the grated apple, egg, cinnamon, baking powder, vanilla, sweetener (if using), and a pinch of salt to the soaked oats. Mix well until combined.
  3. Heat the pan:
    Heat a non-stick skillet or griddle over medium heat. Add a little coconut oil or butter.
  4. Cook the pancakes:
    Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2–3 minutes on each side or until golden brown and cooked through.
  5. Serve:
    Serve warm with a drizzle of honey, maple syrup, or a dollop of yogurt and extra apple slices.
