Ingredients
- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1 medium apple, peeled and grated
- 1 egg
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey or maple syrup (optional)
- Pinch of salt
- Coconut oil or butter (for cooking)
Instructions
- Soak the oats:
In a bowl, combine the oats and milk. Let it sit for 10–15 minutes so the oats soften. - Prepare the batter:
Add the grated apple, egg, cinnamon, baking powder, vanilla, sweetener (if using), and a pinch of salt to the soaked oats. Mix well until combined. - Heat the pan:
Heat a non-stick skillet or griddle over medium heat. Add a little coconut oil or butter. - Cook the pancakes:
Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2–3 minutes on each side or until golden brown and cooked through. - Serve:
Serve warm with a drizzle of honey, maple syrup, or a dollop of yogurt and extra apple slices.
