Ingredients
- 1 cup rolled oats
- 1/2 cup unsweetened applesauce (or 1 small apple, grated)
- 2 eggs
- 1/4 cup milk (dairy or plant-based)
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract (optional)
- 1–2 tsp honey or maple syrup (optional, for sweetness)
- Cooking spray or a little oil for the pan
Instructions
- Blend oats in a blender or food processor until they form a fine flour.
- In a mixing bowl, combine oat flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, applesauce, milk, vanilla, and sweetener (if using).
- Add the wet ingredients to the dry ingredients and stir until just combined. Let the batter rest for 5–10 minutes to thicken.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour 2–3 tablespoons of batter for each pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
- Flip and cook for another 1–2 minutes until golden brown and cooked through.
- Serve warm with fresh fruit, yogurt, or a drizzle of maple syrup.
