Healthy Apple and Oatmeal Pancakes

Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened applesauce (or 1 small apple, grated)
  • 2 eggs
  • 1/4 cup milk (dairy or plant-based)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • 1–2 tsp honey or maple syrup (optional, for sweetness)
  • Cooking spray or a little oil for the pan

Instructions

  1. Blend oats in a blender or food processor until they form a fine flour.
  2. In a mixing bowl, combine oat flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together eggs, applesauce, milk, vanilla, and sweetener (if using).
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Let the batter rest for 5–10 minutes to thicken.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  6. Pour 2–3 tablespoons of batter for each pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
  7. Flip and cook for another 1–2 minutes until golden brown and cooked through.
  8. Serve warm with fresh fruit, yogurt, or a drizzle of maple syrup.
