Healthy Apple and Oatmeal Pancakes

Ingredients

  • 1 cup rolled oats
  • 1 medium apple, peeled and grated
  • 1/2 cup plain Greek yogurt (or milk of choice)
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1–2 tsp honey or maple syrup (optional, for sweetness)
  • Butter or oil for cooking

Instructions

  1. Prepare the oats:
    Blend the rolled oats in a blender until they become a fine flour (about 20 seconds).
  2. Make the batter:
    In a bowl, mix the oat flour with grated apple, Greek yogurt, eggs, baking powder, cinnamon, nutmeg, vanilla, salt, and honey/maple syrup (if using). Stir until well combined. Let sit for 5–10 minutes to thicken slightly.
  3. Heat the pan:
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  4. Cook the pancakes:
    Pour 1/4 cup of batter onto the pan for each pancake. Cook for 2–3 minutes until bubbles appear on the surface, then flip and cook another 2–3 minutes until golden and cooked through.
  5. Serve:
    Serve warm with a dollop of Greek yogurt, fresh fruit, or a drizzle of maple syrup.
