Hawaiian Pineapple Cake recipe

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup vegetable oil
  • 1 can (20 oz) crushed pineapple (with juice)
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup shredded coconut (optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1️⃣ Preheat & Prep:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2️⃣ Mix Dry Ingredients:

  • In a large bowl, combine flour, sugars, baking soda, and salt.

3️⃣ Combine Wet Ingredients:

  • In another bowl, whisk together eggs, vanilla extract, vegetable oil, and the crushed pineapple (including juice).

4️⃣ Blend Together:

  • Gradually mix the wet ingredients into the dry ingredients. Stir until just combined. If desired, fold in chopped nuts and shredded coconut for extra texture.

5️⃣ Bake:

  • Pour the batter into the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.

For the Frosting:

1️⃣ Beat Cream Cheese & Butter:

  • In a bowl, beat cream cheese and butter until smooth and fluffy.

2️⃣ Add Sweetness:

  • Gradually add powdered sugar and vanilla extract, beating until creamy.

3️⃣ Frost & Finish:

  • Spread the frosting over the cooled cake. For a tropical touch, sprinkle with toasted coconut or pineapple chunks on top.

Would you like me to add a twist — maybe a pineapple glaze or a coconut crumble topping for extra island vibes? 🌴✨
