Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 3 medium potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen peas
- 1/2 cup corn kernels (fresh or frozen)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
- Add the chopped onion and garlic to the pot and sauté for 3-4 minutes, until the onion is softened.
- Pour in the beef broth and bring to a boil.
- Add the diced potatoes, carrots, celery, diced tomatoes (with juices), thyme, basil, salt, and pepper. Stir to combine.
- Reduce the heat to low and cover the pot. Let the soup simmer for 20-25 minutes, or until the vegetables are tender.
- Add the peas and corn, and continue simmering for an additional 5-10 minutes.
- Taste and adjust the seasoning with more salt and pepper, if necessary.
- Serve the soup hot, and enjoy!
