Hamburger Stew Soup

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 3 medium potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen peas
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
  3. Add the chopped onion and garlic to the pot and sauté for 3-4 minutes, until the onion is softened.
  4. Pour in the beef broth and bring to a boil.
  5. Add the diced potatoes, carrots, celery, diced tomatoes (with juices), thyme, basil, salt, and pepper. Stir to combine.
  6. Reduce the heat to low and cover the pot. Let the soup simmer for 20-25 minutes, or until the vegetables are tender.
  7. Add the peas and corn, and continue simmering for an additional 5-10 minutes.
  8. Taste and adjust the seasoning with more salt and pepper, if necessary.
  9. Serve the soup hot, and enjoy!
