This recipe creates a hearty and flavorful breakfast casserole perfect for feeding a crowd or meal prepping for the week. Layers of cubed ham, crispy bacon, fluffy eggs, and melted cheese are baked together in a casserole dish until golden brown and bubbly. It’s a delicious and convenient way to enjoy a complete breakfast.

Ingredients:

  • 8 large eggs
  • 1 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked and cubed ham
  • 1 cup cooked and crumbled bacon
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/2 cup chopped green onions (optional)
  • 6 slices bread, cubed (stale bread works best)
  • 1 tablespoon butter, melted (for greasing)

Instructions:

  1. Grease Dish: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with melted butter.
  2. Arrange Bread: Spread the cubed bread evenly in the bottom of the greased baking dish.
  3. Layer Fillings: Sprinkle the cubed ham, crumbled bacon, shredded cheese, and chopped green onions (if using) over the bread.
  4. Whisk Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour Egg Mixture: Pour the egg mixture evenly over the layers in the baking dish, pressing down gently on the bread to ensure it soaks up the liquid.
  6. Let Sit (Optional): For a softer casserole, let the mixture sit for 15-20 minutes before baking to allow the bread to absorb more of the egg mixture.
  7. Bake: Bake for 30-40 minutes, or until the casserole is set and the top is golden brown and bubbly.
  8. Cool Slightly: Let the casserole cool for a few minutes before slicing and serving.

Tips and Notes:

  • Meat Variations: You can use other cooked meats like sausage or leftover cooked chicken.
  • Cheese Variations: Feel free to use different types of cheese such as Gruyere, Swiss, or Colby Jack.
  • Vegetable Additions: You can add sautéed vegetables like onions, bell peppers, or mushrooms to the casserole.
  • Bread Choice: Use any type of bread you prefer, such as white, wheat, sourdough, or even croissants.
  • Make Ahead: You can assemble the casserole the night before, cover it, and refrigerate. Add about 10-15 minutes to the baking time if baking directly from the refrigerator.
  • Storage: Store any leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
