Ingredients:
- 2 ripe bananas
- 1 cup rolled oats
- ¼ cup almond butter (or peanut butter)
- ¼ cup chopped nuts (walnuts, almonds, or pecans)
- ¼ cup unsweetened shredded coconut (optional)
- ¼ cup dark chocolate chips (sugar-free or 85% cocoa)
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 tablespoon chia seeds (optional for extra fiber)
- 1 tablespoon honey or maple syrup (optional for extra sweetness)
Instructions:
- Preheat the Oven – Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the Bananas – In a large bowl, mash the ripe bananas with a fork until smooth. This will act as the natural sweetener and binder for the cookies.
- Mix the Ingredients – Add the rolled oats, almond butter, vanilla extract, cinnamon, salt, and any optional ingredients like chia seeds or shredded coconut. Stir well until fully combined.
- Fold in Nuts & Chocolate – Gently mix in the chopped nuts and dark chocolate chips to distribute them evenly.
- Shape the Cookies – Scoop spoonfuls of the dough onto the lined baking sheet, forming small cookie mounds. Flatten them slightly with the back of a spoon.
- Bake – Place in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.
- Cool & Enjoy – Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container for up to 5 days.
