Ground Beef Stroganoff

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or preferred side (for serving)

Instructions

  1. Cook the beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Once browned, remove from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add diced onions and sliced mushrooms. Cook for 4-5 minutes until the onions become soft and the mushrooms release their juices. Add minced garlic and cook for another minute.
  3. Make the sauce: Sprinkle flour over the vegetables and stir to combine. Slowly pour in the beef broth, stirring constantly to avoid lumps. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer for about 5 minutes until the sauce thickens slightly.
  4. Add the beef and sour cream: Return the cooked ground beef to the skillet and stir to coat in the sauce. Lower the heat, then stir in the sour cream until everything is well combined. Simmer for an additional 2-3 minutes until the sauce is creamy and heated through.
