Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped (optional)
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh parsley for garnish
Instructions
- Cook the beef: In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain any excess grease.
- Add veggies: Toss in onions, garlic, bell pepper, and zucchini. Sauté until softened.
- Simmer: Add diced tomatoes, broth, tomato paste, and spices. Stir well and let it simmer for 10-15 minutes until thickened.
- Finish: Sprinkle cheese on top (optional) and cover for 2 minutes to melt. Garnish with parsley and serve warm!
Want me to make it more spicy, cheesy, or even turn it into a taco-style skillet? Or would you prefer a different direction — maybe a pasta bake or meatball twist?
