Ingredients

- 1 cucumber, sliced

- 1 teaspoon lemon juice or balsamic vinegar

Instructions
- Marinate the Chicken (Optional):
I like to marinate the drumsticks with olive oil, lemon juice, garlic powder, smoked paprika, onion powder, salt, and pepper for at least 30 minutes for extra flavor. - Grill the Drumsticks:
I preheat my grill (or grill pan) to medium heat. Then, I place the marinated drumsticks on the grill and cook them for about 25–30 minutes, turning occasionally, until the skin is crispy and the meat is cooked through (internal temp should be 165°F or 75°C). - Make the Salad:
While the chicken is grilling, I toss together the greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl. I drizzle it with olive oil and lemon juice (or balsamic vinegar) and season with salt and pepper. - Serve:
