Ingredients

  • 3 cups chopped Romaine lettuce (optional, traditional Greek salad uses no lettuce)
  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 green bell pepper, sliced
  • Β½ red onion, thinly sliced
  • 1 cup Kalamata olives
  • 1 cup feta cheese, cut into cubes or crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large salad bowl, combine the tomatoes, cucumber, green pepper, red onion, and olives.
  2. Add the feta cheese on top.
  3. Drizzle with olive oil and red wine vinegar (or lemon juice).
  4. Sprinkle with oregano, salt, and pepper.
  5. Gently toss everything together until well combined.
  6. Serve immediately with fresh crusty bread, if desired.
