Instructions:
Prepare the Chicken:
- In a large bowl, combine the chicken strips, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Mix well to coat the chicken.
- Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours.
- Preheat a grill or grill pan to medium-high heat.
- Grill the chicken strips for 4-5 minutes per side, or until cooked through and slightly charred.
Make the Tzatziki Sauce:
- In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, mint, olive oil, lemon juice, salt, and pepper.

Assemble the Gyros:
