Grandma’s Scotcheroos Recipe

These sweet and chewy bars are a delightful combination of peanut butter, butterscotch, and chocolate. They’re easy to make and always a crowd-pleaser.  

Ingredients:

  • For the Bars:
    • 1 cup light corn syrup  
    • 1 cup granulated sugar  
    • 1 cup peanut butter (creamy or chunky)  
    • 6 cups Rice Krispies cereal  
  • For the Topping:
    • 1 cup semi-sweet chocolate chips
    • 1 cup butterscotch chips  

Instructions:

  1. Prepare the Bars:
    • Grease a 9×13 inch baking pan.
    • In a large saucepan over medium heat, combine the corn syrup and granulated sugar.
    • Cook, stirring constantly, until the sugar is dissolved and the mixture begins to simmer.
    • Remove from heat and stir in the peanut butter until smooth.
  2. Add Cereal:
    • Add the Rice Krispies cereal to the peanut butter mixture and stir until evenly coated.
  3. Press into Pan:
    • Press the mixture into the prepared baking pan using a greased spatula or your hands.
  4. Prepare the Topping:
    • In a microwave-safe bowl, combine the chocolate chips and butterscotch chips.
    • Microwave in 30-second intervals, stirring after each interval, until melted and smooth.
  5. Spread the Topping:
    • Pour the melted chocolate mixture over the bars and spread evenly.
  6. Cool and Cut:
    • Let the bars cool completely at room temperature or in the refrigerator until the topping is set.
    • Cut into squares and serve.

Tips and Notes:

  • Peanut Butter: You can use creamy or chunky peanut butter, depending on your preference.
  • Cereal: Rice Krispies cereal is the classic choice, but you can also use other crispy rice cereals.
  • Topping Variations: You can use other types of chocolate chips, such as milk chocolate or white chocolate.
  • Microwave Caution: Be careful when melting the chocolate and butterscotch chips in the microwave, as they can burn easily.
  • Storage: Store leftover Scotcheroos in an airtight container at room temperature for up to 3 days.
