Ingredients

For the Filling:

  • 6–8 ripe peaches, peeled and sliced (about 5 cups)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp cornstarch

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter, melted
  • ½ cup milk (or buttermilk for extra richness)
  • 1 tsp vanilla extract

Optional:

  • Vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss sliced peaches with both sugars, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes to draw out juices.
  3. Pour the peach mixture into a greased 9-inch pie dish or cast iron skillet.
  4. In another bowl, mix the flour, sugar, baking powder, and salt. Stir in melted butter, milk, and vanilla extract until just combined.
  5. Drop spoonfuls of cobbler topping over the peach filling. It doesn’t have to be perfect—rustic is best!
  6. Bake for 40–45 minutes or until the topping is golden brown and the filling is bubbling.
