Ingredients
For the Filling:
- 6–8 ripe peaches, peeled and sliced (about 5 cups)
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp cornstarch
For the Cobbler Topping:
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup (1 stick) unsalted butter, melted
- ½ cup milk (or buttermilk for extra richness)
- 1 tsp vanilla extract
Optional:
- Vanilla ice cream or whipped cream for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss sliced peaches with both sugars, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes to draw out juices.
- Pour the peach mixture into a greased 9-inch pie dish or cast iron skillet.
- In another bowl, mix the flour, sugar, baking powder, and salt. Stir in melted butter, milk, and vanilla extract until just combined.
- Drop spoonfuls of cobbler topping over the peach filling. It doesn’t have to be perfect—rustic is best!
- Bake for 40–45 minutes or until the topping is golden brown and the filling is bubbling.
- Let it cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream! 🍨
