Grandma Made This – Marinated Cucumbers, Onions, and Tomatoes

Ingredients

  • 3 medium cucumbers, peeled and sliced thin
  • 3 medium tomatoes, cut into wedges
  • 1 medium red or yellow onion, sliced thin
  • ½ cup white vinegar (or apple cider vinegar)
  • ¼ cup water
  • 3 tablespoons granulated sugar (adjust to taste)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Optional: 2 tablespoons chopped fresh dill or parsley

Instructions

  1. In a large bowl, combine sliced cucumbers, tomatoes, and onions.
  2. In a separate bowl or measuring cup, whisk together vinegar, water, sugar, salt, and pepper until the sugar dissolves.
  3. Pour the marinade over the vegetables. Stir gently to combine and evenly coat.
  4. Cover and refrigerate for at least 2 hours (overnight is best!) to allow flavors to meld.
  5. Optional: Just before serving, sprinkle with chopped fresh herbs for added freshness and flavor.
  6. Serve chilled as a refreshing summer side dish!
