Ingredients
- 3 medium cucumbers, peeled and sliced thin
- 3 medium tomatoes, cut into wedges
- 1 medium red or yellow onion, sliced thin
- ½ cup white vinegar (or apple cider vinegar)
- ¼ cup water
- 3 tablespoons granulated sugar (adjust to taste)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- Optional: 2 tablespoons chopped fresh dill or parsley
Instructions
- In a large bowl, combine sliced cucumbers, tomatoes, and onions.
- In a separate bowl or measuring cup, whisk together vinegar, water, sugar, salt, and pepper until the sugar dissolves.
- Pour the marinade over the vegetables. Stir gently to combine and evenly coat.
- Cover and refrigerate for at least 2 hours (overnight is best!) to allow flavors to meld.
- Optional: Just before serving, sprinkle with chopped fresh herbs for added freshness and flavor.
- Serve chilled as a refreshing summer side dish!
