- 1 cup semisweet chocolate chips
Instructions:
Make the crust:
- In a large bowl, whisk together the flour, powdered sugar, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the vanilla extract and ice water, one tablespoon at a time, until the dough comes together.
- Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Roll out one disk of dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch pie plate.
- Roll out the second disk of dough and cut into strips. Set aside.
Make the filling:
- In a large bowl, cream together the butter and sugars until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the chocolate chips.
Assemble and bake:
- Pour the filling into the prepared pie crust.
- Weave the reserved dough strips over the top of the pie to create a lattice crust.
- Bake in a preheated 375°F (190°C) oven for 40-45 minutes, or until the crust is golden brown and the filling is set.
