Gooey Chocolate Pie Recipe

Ingredients:

  • For the crust:
    • 1 ¾ cups all-purpose flour
    • ½ cup unsalted butter, cold and cubed
    • ¼ cup powdered sugar
    • ¼ teaspoon salt
    • 1 teaspoon vanilla extract
    • 2-3 tablespoons ice water
  • For the filling:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • ½ cup packed light brown sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • 1 cup semisweet chocolate chips

Instructions:

Make the crust:

  1. In a large bowl, whisk together the flour, powdered sugar, and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the vanilla extract and ice water, one tablespoon at a time, until the dough comes together.
  4. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  5. Roll out one disk of dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch pie plate.
  6. Roll out the second disk of dough and cut into strips. Set aside.

Make the filling:

  1. In a large bowl, cream together the butter and sugars until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  4. Stir in the chocolate chips.

Assemble and bake:

  1. Pour the filling into the prepared pie crust.
  2. Weave the reserved dough strips over the top of the pie to create a lattice crust.
  3. Bake in a preheated 375°F (190°C) oven for 40-45 minutes, or until the crust is golden brown and the filling is set.
  4. Let cool completely before serving.
