Golden Walnut Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 cup finely chopped walnuts
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large mixing bowl, combine the flour, chopped walnuts, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, melted butter, oil, vanilla extract, and buttermilk.
  4. Gradually fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Optionally, dust with powdered sugar or drizzle with a simple glaze before serving.
