Golden Vanilla Mini Loaves

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • ¼ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour mini loaf pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, then mix in the vanilla extract.
  5. Add the sour cream and mix until smooth.
  6. Gradually add the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined — do not overmix.

  8. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaves cool in the pans for 10 minutes, then remove and transfer to a wire rack to cool completely.
