- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tbsp pure vanilla extract
- ½ cup sour cream (or plain yogurt)
- ¼ cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and lightly flour mini loaf pans or line them with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, then mix in the vanilla extract.
- Add the sour cream and mix until smooth.
- Gradually add the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined — do not overmix.
- Divide the batter evenly among the prepared mini loaf pans.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaves cool in the pans for 10 minutes, then remove and transfer to a wire rack to cool completely.
