  • ½ cup milk
  • 1 cup golden raisins
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons yogurt or sour cream (optional, for extra moisture)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a square baking pan.
  2. Soak golden raisins in warm water for 10 minutes, then drain and pat dry.
  3. In a bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract and yogurt (if using).
  6. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  7. Gradually add dry ingredients to the wet mixture, alternating with milk. Mix gently.
  8. Fold in the soaked raisins.
  9. Pour batter into prepared pan and smooth the top.
  10. Bake for 25–30 minutes, or until a toothpick comes out clean.
  11. Let cool completely, then cut into squares.

Tips

  • Toss raisins in a little flour before folding in to prevent sinking.
  • For extra flavor, soak raisins in warm orange juice or milk instead of water.
  • Add chopped nuts for a crunchy texture.
  • Store in an airtight container for up to 3 days at room temperature.
  • Dust with powdered sugar before serving for a beautiful finish.
