Ingredients
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 2 large eggs
- ½ cup milk
- 1 cup golden raisins
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 2 tablespoons yogurt or sour cream (optional, for extra moisture)
Instructions
- Preheat oven to 180°C (350°F). Grease and line a square baking pan.
- Soak golden raisins in warm water for 10 minutes, then drain and pat dry.
- In a bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract and yogurt (if using).
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, alternating with milk. Mix gently.
- Fold in the soaked raisins.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes, or until a toothpick comes out clean.
- Let cool completely, then cut into squares.
