Gluten-free cheese bread

Ingredients

  • 1 cup red lentils (soaked for at least 3 hours)
  • 2 eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • ¼ cup Greek yogurt or sour cream
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon dried oregano or basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. Drain the soaked lentils and blend them in a food processor until smooth.
  3. Add eggs, Greek yogurt, salt, baking powder, and seasonings. Blend until fully combined.
  4. Stir in the shredded cheese.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 30-40 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool for a few minutes before slicing. Enjoy warm!
