Ingredients
- 1 cup red lentils (soaked for at least 3 hours)
- 2 eggs
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- ¼ cup Greek yogurt or sour cream
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon garlic powder (optional)
- ½ teaspoon dried oregano or basil (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- Drain the soaked lentils and blend them in a food processor until smooth.
- Add eggs, Greek yogurt, salt, baking powder, and seasonings. Blend until fully combined.
- Stir in the shredded cheese.
- Pour the batter into the prepared loaf pan.
- Bake for 30-40 minutes or until golden brown and a toothpick comes out clean.
- Let cool for a few minutes before slicing. Enjoy warm!
