German Potato Pancakes

INGREDIENTS

  • 4 medium potatoes, peeled
  • 1 small onion
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Oil for frying (vegetable or canola)

Instructions

  1. Grate Potatoes & Onion:
    Grate the potatoes and onion using a box grater or food processor. Place the mixture in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Mix Batter:
    Transfer the dry grated mixture into a bowl. Add eggs, flour, salt, and pepper. Mix until well combined.
  3. Heat Oil:
    In a large skillet, heat about 1/4 inch of oil over medium heat until hot.
  4. Fry Pancakes:
    Drop heaping spoonfuls of the potato mixture into the skillet. Flatten each spoonful with a spatula to form pancakes.
  5. Cook Until Golden:
    Fry for 3–4 minutes on each side or until golden brown and crispy.
  6. Drain Excess Oil:
    Remove and place on a plate lined with paper towels to absorb extra oil.
  7. Serve Hot:
    Serve immediately with applesauce, sour cream, or your favorite dipping sauce.
