INGREDIENTS
- 4 medium potatoes, peeled
- 1 small onion
- 2 eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Oil for frying (vegetable or canola)
Instructions
- Grate Potatoes & Onion:
Grate the potatoes and onion using a box grater or food processor. Place the mixture in a clean kitchen towel and squeeze out as much liquid as possible. - Mix Batter:
Transfer the dry grated mixture into a bowl. Add eggs, flour, salt, and pepper. Mix until well combined. - Heat Oil:
In a large skillet, heat about 1/4 inch of oil over medium heat until hot. - Fry Pancakes:
Drop heaping spoonfuls of the potato mixture into the skillet. Flatten each spoonful with a spatula to form pancakes. - Cook Until Golden:
Fry for 3–4 minutes on each side or until golden brown and crispy. - Drain Excess Oil:
Remove and place on a plate lined with paper towels to absorb extra oil. - Serve Hot:
Serve immediately with applesauce, sour cream, or your favorite dipping sauce.
