Ingredients

  • 4 large potatoes (starchy, like Russet), peeled and grated
  • 1 small onion, finely grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Prep the Potatoes:
    Grate the potatoes using a coarse grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  2. Mix Ingredients:
    In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and pepper. Mix well until fully combined.
  3. Heat the Oil:
    In a large skillet, heat a generous amount of oil over medium heat until hot but not smoking.
  4. Form Pancakes:
    Scoop 2–3 tablespoons of the potato mixture and flatten into a pancake shape. Carefully place into the hot oil.
  5. Fry Until Golden:
    Fry each side for about 3–4 minutes or until golden brown and crispy. Avoid overcrowding the pan.
  6. Drain:
    Remove pancakes and place them on a plate lined with paper towels to absorb excess oil.
  7. Serve Hot:
    Serve immediately with applesauce, sour cream, or enjoy plain!
