Instructions
- Prep the Potatoes:
Grate the potatoes using a coarse grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. - Mix Ingredients:
In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and pepper. Mix well until fully combined. - Heat the Oil:
In a large skillet, heat a generous amount of oil over medium heat until hot but not smoking. - Form Pancakes:
Scoop 2–3 tablespoons of the potato mixture and flatten into a pancake shape. Carefully place into the hot oil. - Fry Until Golden:
Fry each side for about 3–4 minutes or until golden brown and crispy. Avoid overcrowding the pan. - Drain:
Remove pancakes and place them on a plate lined with paper towels to absorb excess oil. - Serve Hot:
