German potato pancakes

INGREDENT

  • 4 medium potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Oil for frying (vegetable or canola)

Instructions

  1. Grate the potatoes and onion using a box grater or food processor.
  2. Transfer to a clean kitchen towel and squeeze out as much liquid as possible.
  3. In a large mixing bowl, combine the grated potato and onion with eggs, flour, salt, pepper, and garlic powder (if using).
  4. Heat a thin layer of oil in a nonstick or cast-iron skillet over medium-high heat.
  5. Scoop 2–3 tablespoons of the mixture per pancake into the pan, flattening gently with the back of the spoon.
  6. Fry for about 3–4 minutes on each side or until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. Serve warm with applesauce, sour cream, or your favorite dipping sauce.
