- 4 medium potatoes, peeled
- 1 small onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- Oil for frying (vegetable or canola)
Instructions
- Grate the potatoes and onion using a box grater or food processor.
- Transfer to a clean kitchen towel and squeeze out as much liquid as possible.
- In a large mixing bowl, combine the grated potato and onion with eggs, flour, salt, pepper, and garlic powder (if using).
- Heat a thin layer of oil in a nonstick or cast-iron skillet over medium-high heat.
- Scoop 2–3 tablespoons of the mixture per pancake into the pan, flattening gently with the back of the spoon.
- Fry for about 3–4 minutes on each side or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with applesauce, sour cream, or your favorite dipping sauce.
