Gemma’s Chewy Brownies

Ingredients

  • ½ cup (115g) unsalted butter
  • 1 cup (200g) sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (40g) cocoa powder
  • ½ cup (65g) all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

Instructions

  1. Preheat your oven to 170°C (340°F) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a saucepan or microwave. Let it cool slightly.
  3. In a bowl, mix melted butter and sugar until well combined.
  4. Add eggs one at a time and whisk well. Stir in vanilla extract.
  5. Sift in cocoa powder, flour, salt, and baking powder.
  6. Gently fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  9. Let brownies cool completely before cutting into squares.
