Garlic Steak & Potato Foil Packets

Ingredients

  • 1½ lbs sirloin steak, cut into 1-inch cubes
  • 1 lb baby potatoes, halved or quartered if large
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning (or mix of thyme, oregano, basil)
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Optional: red pepper flakes, for a little heat
  • Heavy-duty aluminum foil

Instructions

  1. Preheat & Prepare:
    Preheat grill to medium-high heat (or preheat oven to 425°F / 220°C).
  2. Make the Garlic Butter:
    In a small bowl, mix melted butter, olive oil, garlic, salt, pepper, and Italian seasoning.
  3. Toss Ingredients:
    In a large bowl, combine steak cubes and potatoes. Pour the garlic butter mixture over them and toss to coat evenly.
  4. Assemble Foil Packets:
    Tear 4 large sheets of foil (about 12 inches long). Divide the steak and potato mixture evenly among the sheets. Fold the sides up and seal the packets tightly.
  5. Grill or Bake:
    • Grill: Place foil packets on the grill and cook for 12–15 minutes, flipping once halfway through.
    • Oven: Place on a baking sheet and bake for 20–25 minutes until potatoes are fork-tender and steak is cooked to your liking.
  6. Serve:
    Carefully open the foil packets (watch for steam). Garnish with chopped parsley before serving.

Tip: You can add sliced onions, bell peppers, or mushrooms for extra flavor!
