Garlic Steak & Potato Foil Packets


Ingredients

  • 1 ½ pounds sirloin steak, cut into 1-inch cubes
  • 1 pound baby potatoes, quartered
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley (for garnish)
  • Optional: grated Parmesan cheese

Instructions

  1. Preheat & Prep: Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. Combine Ingredients: In a large bowl, combine steak cubes and potatoes. Drizzle with olive oil and melted butter, then add minced garlic, thyme, rosemary, parsley, salt, and pepper. Toss well to coat evenly.
  3. Assemble Packets: Cut 4 large pieces of heavy-duty aluminum foil. Evenly divide the steak and potato mixture among the foil sheets. Fold up the sides and seal to create packets.
  4. Cook:
    • Grill: Place packets on the preheated grill and cook for about 15–20 minutes, turning once halfway through, until the steak is cooked to your liking and potatoes are tender.
    • Oven: Bake foil packets on a baking sheet for about 20–25 minutes, until done.
  5. Finish & Serve: Carefully open the packets (watch for steam!), garnish with fresh parsley and optional Parmesan. Serve hot and enjoy!
