Ingredients
- 6 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary (or fresh, finely chopped)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 lemon, sliced (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C).

- Make garlic herb mixture: In a small bowl, combine olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, and pepper.
- Coat chicken: Pour the garlic herb mixture over the chicken thighs. Rub the seasoning all over each piece to coat evenly.
- Arrange in baking dish: Place the seasoned chicken thighs skin-side up in a baking dish or oven-safe skillet. Add lemon slices around the chicken, if using.
- Bake: Bake for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
- Serve: Garnish with fresh chopped parsley and serve warm.
